White gravy is actually really easy to make vegan - you basically just need flour, some sort of oil, and some sort of 'milk', then the necessary spices. The sausage isn't at all necessary, and is just something you put in if you happen to really want sausage (and don't have any religious/health/etc. objections to it.) I know there hasn't been meat in it when I've been eating it in *years*.
