IMPORTANT: Copy or move your whole game folder out of the Origin installation directory before extraction. In most cases you will get access problems if you don't do this!
Also use a full installation, not just a few files.
Note about Frostbite in general: When you extract only resource files you do not have the full assets. Most of these, especially .Texture and .MeshSet files need .chunk files to go with them! Chunks are randomly named, so you will not currently find them with the search filter you enter unless you know the precise chunk name.

1. After you opened the program press the 'select Game' button. A window will popup:

You have to set these before being able to extract anything. In this example the game is SWBF2 (i use full version but it also works with beta):
game folder: Currently select the Data folder of the game here.
dump folder: The folder where your extracted files will be. Make sure you have full access in this folder!
Folders (and subfolders) this should NOT be:
c:\Users\
c:\Windows\
c:\Program Files\
c:\Program Files (x86)\
Generally, if you have multiple drives i would avoid extraction to c:\. If you only have c:\ make a new directory like c:\SWBF2_Extraction\.
Select your game: Currently these games are supported for extraction. Select the one you want.
Then close this window.
2. Now press each of these buttons once. The first two will show small popup windows with file counts and the last will list this info in the main window. You only need to do this once! If you close the program this info will be saved when you next open it again.

3. For keeping things easy at the moment we will do the space wasting method of extracting this game. Notes on how to extract single assets are below, in case you don't want a full game dump!
Select all three boxes (ebx, resources and chunks), leave your search filter empty and tick the 'create folders' box. Then press the big red Dump ! button. This will take about an hour and needs 60+GB free disk space.

Continue here to learn how to extract meshes.
Less space wasting method:
1. The tool has a very convenient search filter that allows you to search for assets by name. Enter what you like into the search bar, then press FilteR. If you are satisfied with your results, press Dump ! to extract these files only.

2. You can also manually search for chunks if you have (part of) their name and dump them seperately. How to get names of these is in the Mesh and Texture tutorial.
