It's something that started in Star Trek TOS in the Episode "By any other name." when Scotty was trying to overwhelm an alien's newfound human senses with a bunch of alcoholic beverages, one was unidentifiable aside from the fact that it's green. This was later touched upon in Star Trek The Next Generation episode "Relics" When Scotty went to Ten Forward for a drink, after he ordered scotch he noticed that it didn't taste right, Data then mentioned that Synthehol is served aboard starships but he did manage to find an alcoholic beverage, but the label was faded so Data Couldn't read it and so just said "It is Green" Later on in a Holodeck recreation of the Original Enterprise's Bridge Captain Picard identified it as Aldebaran Whiskey noting he was the one who gave it to Guinan.
