The font in example picture is "liberation-mono-regular-16".You may use mkfont.sh script to generate font for you  www.rodsbooks.com/refind/theme…

There is no option to change font color. 
I hope the refind 's creator will add this ability in the future,I plan to add more font (in various font size) for next release
