Well, there's plenty of evil characters as well, no? Seath, Smough, Elana, Nashandra, Wolnir and so on. Aldrich can't be more evil than those, can he?

 seath was insane while aldrich wasn't and knew fully well what he was doing, smough was a fat man eater but he was still loyal to his king, wolnir was a prick king who killed some other prick kings for their land (they probably would have done the same if they could) and elana was never stated to had done anything yet and both her and nashandra were simply following their separate natures as embodiment's of Manus's wrath and greed respectively. finally aldrich was the only one who ate children (or at the very least had an appetite for kids mentioned)

Seath betrayed and doomed all of his race before he turned insane. Smough is sadist, besides, if you defeat Ornstein first Smough will finish him off. Killing a comrade in arms simply to gain lightning buff is a very evil act. Of course, that's not the same as Aldrich's doing, but nonetheless, that bastard is evil. Wolnir's soul description says "sentenced countless souls to gruesome deaths, keen to outlive them all". He haven't slayed them in battle, nor he inprisoned or executed them for crimes. Indeed, they would have done the same if they could, but that just makes them evil as well. In Elana's soul description you can see this:"This child of Dark accompanies the dragon, slowly amassing souls in anticipation of the coming day of vengeance". As you can see, Elana's goal is to consume and amass souls to repeat what Manus had done long ago. The destruction of Shulva is fitting well with her plans. Even if she has no part in this, this part of Manus seeks "revenge" just like Manus himself. Just because she and Nashandra are parts of Manus's soul doesn't mean they aren't evil by themselves. There's Alsanna and Nadalia, first one stayed as oracle and guardian of Eleum Loyce, and the second one renounced her flesh, even if they ever wanted to commit something evil, they haven't. But you're right, eating children is not cool at all.

in seaths defense his people ridiculed him and mocked him for his lack of scales. secondly there are somethings in dark souls 3 that state that ornstein left anor londo, witch would mean that the ornstein in dark souls 1 was possibly an illusion and if that is not the case then technically smough had no choice other than to kill ornstein for his power if he wanted to still have a chance to defend anor londo and its secrets. as for elana there is nothing that states what she is planning to avenge and for all we know she is seeking vengeance for her kingdom. finally alsanna and nadalia werent evil because they were not formed from fragments of manus that were as inherently violent as desire or wrath. Alsanna was born of fear so she was meek and simply desired protection and nadalia was made from manus's possessive nature witch led her to wait forever

Well, every villain has a reason to be a villain, nobody argues with that. As for Smough, if you'll kill him first, Ornstein will look almost grieving at his ally's demise. He will absorb Smough's power by mere touch. Smough, on the other hand, simply kills Ornstein without any doubt or remorse, like a bug or something. He laughs at Chosen's suffering, he obviously enjoys death and torture.
Elana has no one to avenge her kingdom to - Drakeblood invaders was either killed by Sinh's poison, or drowned with the city. I see only one logical explanation - sinse she is wrath of Manus, the revenge she seeks is the revenge for him, revenge on the whole world.
If Alsanna wanted protection, then she haven't accomplished her goal, because Eleum Loyce is ruined, chaos is rising, she is the only one who guards the entrance, she is not protected, but protector now. She is literally living on a time bomb, her behavior is opposite of what you had described.
If Nadalia wanted to wait, why would she sought Iron King to marry him in the first place? It just doesn't make sense. It looks more like every Manus's part is comeplete personality, not programmed robots, but living beings with a choise. Some choose to succumb to their nature and become evil, some have found different ways.

If you think about it, Aldrich was made a lord by his order, who was perverted by Sullivan. Sullivan also allowed access to Aldrich to Anor Londo and fed him Gwyndolin.

Aldrich may not deserve his title of saint, but he wouldn't have gotten fan without his "right-hand-pontiff"!

Well you can only write an undead insane character so many times. They probablu did him and Pontiff Suleyvahn as a sort of way to get past a writers block and it worked. Thats my theory, anyway. Especially since they're really the only villains in the series.

I like how its always a thing in Dark Souls where a Gluttonous being always ends up turning into something where the mouth grows and teeth grow constantly until even the rib cage becomes teeth. (Save for the Covetous "Demon" in Dark Souls 2)

I definitely recommend the game, both story and gameplay are intriguing. Though the original translation is also "intriguing", for better and worse - newer versions use a more standard ye olde english style.

I've always thought Mozgus was super creepy. Perfect refrence because it fits into the theme of Aldrich. :)
