I know we already covered this, but, didn't completely realize what you were referring to at the time, so when you focus "about a third into the scene" is that auto or manual focus?

Well it can be either. If you do it using auto focus though you will probably have to lock the focus and recompose the picture. 
You can get a hyper focal app for your phone which tells you what distance to focus at to get maximum depth of field too.

  Yeah, that's what I had been doing, in my short time experimenting with the effect, then I realized that couldn't be right with how unreliably I'd be able to capture an envisioned scene, I'd have to shoot wider on my reframe and then crop down. :(

I suppose you do it manually? If you have any specific app in mind, I'm willing to give it a look, but is the workable threshold really that small? Isn't the idea just to balance the two sides of depth of field, from the focal point backwards to extend to the end  of your scene, and from the camera to the focus point to cover the front of the scene?
Or is there something wrong with my understanding of depth of field?
