Semi-serious - Do you think that with my style of painting learning digital art might be more efficient and productive?

Yes, I think that not worrying about ruining stacks of paper might help you loosen up. So buy a tablet (after New Year, probably)
You're speaking from a viewpoint of ignorance about digital art, tools won't necessarily make you more efficient, but buy tablet anyway.

How well does setting personal deadlines for creative projects work for you?

Very well, they motivate me to work and I usually finish "on time".
Moderately well - I don't always manage to be "on time", but I do feel more motivated and do work harder.
So, so - if I'm not busy with mandatory things, I might push a bit harder to do art in my free time, but it really depends.
Not well at all, they only stress me and I end up postponing instead of when it might be ready if I didn't have a self-imposed deadline.
I just don't bother with deadlines or discipline and go with the flow.
Deadlines only interest me as long as they're expiration dates on my carton of milk. (eh?)
