Of course, if your apple merchant uses a unit of measure of QUANTITY instead of WEIGHT - say, a Bushel or a Hogshead - you are screwed.
Same if the merchant uses a MASS-based Scale, and measures the force necessary to pull a spring while flinging the apple about in a centrifuge...or similar inertial-measurement technique...then you would pay for the total MASS, meaning the Mass of the apple PLUS the Mass of the injected Helium...
