Turkish delight really doesn't keep for very long (I made some before and I think it lasts for about a week) unfortunately. The shelf life would increase when I coated it in the chocolate but I'm still not sure it would increase enough to make me comfortable making them to send by mail. And I don't really want to start adding a bunch of preservatives like you find in Turkish delight that you buy in the shops.
Caramel on the other hand I would definitely be up for. I've made sea-salted caramels in the past and they were super tasty! And a more gooey caramel would also be fun to experiment with. I'm actually looking for interesting new flavours to try at the moment.
