I actually remember the Gen V games having an in-game achievement for beating the champion with Pokémon of a specific type, and I was poised to get all 17 (cuz this was before the Fairy type). I mainly used five random Pokémon I obtained throughout my adventure (Trained until level 67), followed by my main lead Pokemon, who was on average 15 levels higher than the other five. And keep in mind, the champion’s Ace mon is level 78 in the rematches.
