They actually have undead Beholders in DND; in the 4th Edition Books I had, the MM3 or Monster Manual 3 had "Ghost Beholders (Insubstantial, dealt Necrotic Damage in addition to Psychic, Cold, Paralysis, and Dmoination, Could Phase through Walls, and had a weakness to Radiant or Holy Damage). 5th Edition's Monster Manual had Skeletal Beholders (which somewhat confused me initially, as I had previously assumed that Beholders, much like Ithillids, Neogi, and other Molluscoid inhabitants of the Far Realm, they were Invertebrates).
