Hey Morgan, I can answer this. Quads are easier to work with while modeling, and they also are much better for animation as they stretch in more intuitive ways than triangles. However, game engines convert all polygons to triangles so when you're thinking about your polygon budget, it's a lot better to look at the triangle count to know if it'll be too heavy for your engine or not. So you do use quads for building and animating the model, but you count the triangles for performance purposes.
