I've really been studying artists like you on these kinds of techniques.  And I wonder do you take care of all the shading first in grayscale and color the final piece using color layers?

In most cases I indeed do at the least a rough shading in grayscale (with fairly cleaned silhouettes) and even going as far as doing most of the initial detail work in it.

Then I add colours through different means as I find 1 rarely gives me the result I want.
So I use Curves and Colour balance adjustment layers to add the overall tone then a layer on Overlay to add all the individual colours manually

After the colour I tend to clean things up a bit and add the smaller details and most visual effects.
There's no real defined point where I switch from grey to colour, sometimes I do it a lot earlier than other, so it depends on the piece.

I like seeing these kinds of progress pictures. And the end result is really nice, too!
