Chocolate Oatmeal No-Bakes

It’s time for some holiday recipes again! On the menu this year: honey cookies , fudge , and chocolate oatmeal no-bakes, my mom’s soft sugar cookies, and soft molasses cookies.

The no-bakes are not an original recipe of mine, or even of my mom’s or grandma’s. It’s off the back of the Hershey’s Cocoa can! My mom made these when I was little, and I haven’t been little for some time now, so it’s a classic. I can’t eat them any more due to my mild peanut allergy (I imagine almond butter would work well in them too, but it’s a bit too expensive to cook with), but they are Robert’s favorite, and I make a batch for him every year that he can have all to himself.

Chocolate Oatmeal No-Bakes

2 cups granulated sugar
1/2 cup milk
1/2 cup butter
4 tablespoons cocoa
1 teaspoon vanilla extract
1/2 cup creamy peanut butter
3 cups quick-cooking rolled oats (or 2 cups oats and 1 cup shredded coconut – I don’t care for coconut that much!)

Line two cookie sheets or jelly roll pans with waxed paper.

Mix the sugar, milk, butter, and cocoa in a deep cooking pot (I use the 5-quart stockpot I use for boiling pasta or making soup) and bring to a boil over medium heat, stirring frequently. Once the mixture is at a rolling boil, let it boil for one minute (use a timer to keep track!), stirring constantly. When the minute is up, remove the kettle from the heat. Add the vanilla (it will spit and sputter at you as the alcohol burns off) and the peanut butter. Stir until the peanut butter is melted. Add the oats (and coconut, if using) and stir until well combined. Drop by rounded tablespoons onto the wax paper. Work quickly as the mixture will start to become crumbly as it cools. If you want, you can top each cookie with an M&M, but I don’t bother getting that cute. Put the sheets of cookies in a cool spot – the refrigerator or a cold garage – until the cookies are set firm. Transfer to an airtight container with wax paper between layers. Makes about 2 dozen. They are safe to store at room temperature, because I guarantee they don’t last long!

Aww! I'm sure you could do it! :hug: If you can make noodles from a box - and I know you can, because I ate them! :laughing: - you can make these cookies. :nod:

:blush: Well the noodles from a box is pretty easy. I'm so sorry I had to subject you guys to that! I know it wasn't like... too fancy, but at least the salmon jazzed the pasta up a bit! :giggle:

Chad would marry me all over again if I learned to bake these! :rofl:

Hey, nothing wrong with noodles from a box! That was not a complaint at all! You made us a very good dinner, and sometimes when we have salmon, Robert asks if I would make it "like Kristen did". :love:

These cookies are easier than box noodles - or at least just as easy, I promise!
