Oh how I adore Adrian von Ziegler's work! 
I thoroughly enjoy listening to Jeremy Soule's creations as well as Enya or choral pieces. 

Nightwish, totally. Completely epic Symphonic Metal. Basically, a metal band that gets a full symphony orchestra in on some of their tracks. And their lead singers tend to be altos, which puts them right in my range!

Jeremy Soule (also for example known for the Skyrim OST) and Hans Zimmer (Known for a lot) both are great composers, who also both have fantasy related music. Oh and Christopher Tin as well

- then ofc various game and movie soundtracks like that of world of warcraft, dragon age (origins), the witcher (III), Skyrim etc. is what I always find myself drawn to, even when it comes to my daily choice of music ^w^

I also like the powerful and eerie sound of the min'yō singers chorus from the Ghost in the Shell soundtracks composed by Kenji Kawai.
Maybe not all as epic as you'd like but for me this is wonderful music to drift into a fantasy world and draw.
