Were Ghazan and Ming - Hua actually in love?
To be honest, i'm not so sure. Bolin did say that there was an unspoken attraction between them and the ship is 2/3 chance to be canon. However, there were no love moments between them. Zaheer and P'li were in love while Ghazan and Ming - Hua only worked together but their story was never classified as a full fledged love story like Romeo and Juliet

"She's gone." I stammered when the smoke was cleared away and the men, along with Ming had vanished.
"Zhan, are you ok?" Femke asked but I didn't reply, barely able to grasp what had just happened. I just told her how I felt. And now she was gone.
'Should have brought it up earlier.' I thought as I kept staring at the place I last saw her.
"Ok, we have to make a plan and execute on it before she reaches her parents." I could hear Zaheer say the distance.
"Maybe her parents just wanted to speak to her?" Bolin commented.
"Sure, that's why they started attacking and saying things are 'classified'."Femke replied

Hei ground the toothpick between his teeth as he watched the horizon from the window of the temple. Ming Hua flipped down from the floor above, "Any sign of them?" "Not yet," Hei replied dryly, "Sundown's not far off. I'm starting to worry this was a bum tip." Ming Hua sat down on the window sill next to him, "I hope not. We would've rushed all the way here for nothing." Hei nodded, "Yep.
