Line Change: The Cook

My first chicken didn’t quite work out the way I intended. It looked dry, the char was a little overdone; it was almost as if a tire had run over and squeezed all the moisture out, leaving the fine lines of its tracks and its sweet, rubbery flavour melded with the pale meat. Rookie mistake.
Maybe I’m being overly critical—after all, it looks fine to the untrained eye. It’s not that the guys from the hockey team, many of them regulars, expect five-star service or anything from a tourist trap in the run-down part of town. Just a well-cooked, hearty meal
