A smooth and creamy white chocolate mousse with sharp crushed raspberry base topped off with more raspberries.

RECIPE
You will notice there is no egg whites in this recipe, unusual for a mousse but I do not like to eat or serve raw eggs to my children. There is a recipe linked in the photo below for my dark chocolate mousse if you are a purist and want mousse the proper way with raw eggs to make it a lot lighter and fluffier but for those who are not a fan this is a nice alternative.

Ingredients
White Chocolate (1/3 per serving glass)
Double/heavy cream (1/3 per serving glass)
Raspberries (1/3 per serving glass)

Method.
1. With an electric mixer whip up some cream into soft/medium peaks. Set aside.
2. Over a pan of hot water place a heat proof bowl and gently melt your chocolate, making sure the water does not touch your bowl, burning the chocolate. If however your chocolate does start to get a little grainy which is easily done with white chocolate add a couple drops of vegetable oil and mix, mix, mix, this will bring the chocolate back to a usable consistency. Leave to cool a little but not harden.
3. While waiting for your chocolate to cool wash and crush some raspberries and place them in the bottom of each glass. Clean off any mess up the inside of your serving glasses with some kitchen roll.
4. Now your chocolate has cooled, fold into the cream and layer on top your crushed raspberries.
5. Chill for 30 minutes or so, add some fresh raspberries on top and serve.

Store in an air tight container in the fridge for up to three days.
OPTIONAL
If you have more than ten minutes you can strain your raspberries to remove all the seeds and add some gelatin to it to create a nice clean line when adding the mousse on top.
You can add some vanilla pod to the mousse
If unlike me don't mind using raw egg add some whipped, stiff egg whites for a light and fluffy finish to the mousse.
If you don't like white chocolate, use milk or dark. Same goes for the raspberries you can use strawberries, nutella etc

For my dad's birthday this year and every year in fact, I make him his favourite cheesecake, no bake strawberry jam cheesecake! This year I had some leftovers so made these lovely little bite size versions out of it.

RECIPE
The following quantities are rough estimates and will vary depending on the size of the glasses/bowls you use and personal taste so try as you go and adjust accordingly . I also used an online conversion chart for different weights so fingers crossed they are correct or near enough.

INGREDIENTS
5-7 Digestive biscuits/graham crackers/gluten free biscuits
115g (8 tbsp = = 1/2 cup = 1 stick = 4 oz) Cream Cheese (i use Philadelphia)
85g (5.5tbsp = 1/3 cup = 85ml = 2.8oz) Double/Heavy Cream
40-50g (3tbsp = 1/4 cup = 1/3 stick = 1.7oz) Butter, melted
6-9 Heaped tablespoons of icing/confectioners sugar.
Strawberry/raspberry jam, lemon curd etc.

METHOD
1. Crush the cookies or blitz in a food processor.  Add the melted butter a bit at a time, continue mixing in the food processor or by hand until wet but not dripping to form the base.
2. Pack your base firmly down then add a squirt/dollop of jam on top, but not too much as it will be too sweet.
3. Whip cream until you have stiff peaks.
4. Mix the cream cheese with icing sugar, a few tablespoons at a time until you have the sweetness you desire.
5. Gently fold in the cream.
6. Add the mixture to the base then refrigerate until cooled and set (20 minutes minimum) Add a little jam or decoration on top to serve.
7. Store in an air tight container and consume within 3 days.

this piece stands about 18 inches tall
it was made for the greater capitol area cake show competition
it recieved a first place and best of division award
i spent 10 hours fro 8pm to 6am the night before the competition making it

Great for Sunday Brunch or perhaps for Mother's day that's coming up :heart:


:bulletred: You will need

1. One package of round pot sticker wrappers. Use cookie cutter to make shape. I used a large star mold.
2. One 8 oz strawberry basket
3. Whipped cream and powder sugar (for dusting on top)
4. The little green leaves for decoration is chocolate mint from my garden. I like to take a pinch and eat them when i work in my garden. They really do taste like chocolate. I know weird.

1. Heat cooking oil on high, deep fried wrappers for no more than 30 seconds. Remove immediately and set aside to cool.
2. Slice strawberry into thin slices
3. Assemble

That's it, super quick and easy.

I really don't like wasting food. My husband however, loathes it. He takes it to a whole other level. If the expiry date shows the day before yesterday's date (or even more sometimes), he has no problem eating it. I'm not like that at all, when the clock strikes midnight it's like the food magically transforms into pure toxic evil. I need to get rid of it as fast as possible. My sour cream was about to go bad so I decided to make this cake.

I don't know about you, but I feel that I need a break from the sugar overkill desserts that I normally make. I wanted to keep this one plain, with no icing and I'm so glad that I did!

Also, my European friends will be happy that the measurements are written in metric too!

A wonderfully moist chocolate sponge, filled and covered with fresh homemade whipped cream and topped with sliced juicy strawberries. A must for chocolate lovers! but don't worry it has fruit in it so it's perfectly healthy! ;)

I made this cake when Wimbledon was on back in summer (I have a few photo's to post of things I baked a while ago), naturally I have to use some fresh in season strawberries at the time!

Ceylon milk tea cupcakes topped with whipped cream and honey. Just like a proper cup of tea, but as a cupcake! A cupcake of tea? Fufufufu. Credit to Rosemary Pryor for the original recipe.

Ingredients:
-4 eggs
-1 1/2 cups sugar
-2 1/4 cups flour
-2 1/4 teaspoons baking powder
-1 1/4 cups milk
-10 tablespoons butter
-4 teaspoons loose leaf ceylon (or the tea of your choice - Earl Grey, black, and/or Irish breakfast recommended)
-heavy whipping cream
-honey

Beat the eggs on high until they're fluffy.
Add sugar (slowly) until that gets fluffy too.
Mix baking powder and flour, then mix those into the egg+sugar mix.
Heat the milk on a stove until it nears simmering, then steep the ceylon for 4-5 minutes.
Add butter to milk and mix together. Don't allow the mixture to actually start boiling.
Add hot milk to the batter (slowly) and beat until it's combined. Don't overbeat, or you will have chewy cake instead of fluffy.
Bake at 350 degrees F. About 18 minutes for cupcakes, 30-35 minutes for a cake.

While the cake is baking, make the whipped cream. Uh... basically just take the heavy whipping cream and beat it on high with like an eggbeater or something until it becomes whipped cream. I like to go a little longer than necessary (but not as far as the butter stage) so that the texture is a little thicker and it resembles clotted cream. (Or you could also make clotted cream, but that's a different show).

Let the cupcakes cool, then pipe the cream and drizzle a light honey on top.

A cookie tart shell, a layer of raspberry compote, fluffy lemon zest whipped cream and sharp raspberries. A delicious and refreshing dessert.

I had some leftover cookie dough so decided to experiment to see if I could use my new tart cases as a mold for it. As expected it came out thicker than if I used plain flour but self raising flour was all I had for the cookie dough so it doubled in size. Now I know it works and I have some plain flour I will make them again as the family loved this a lot.

I am getting a little addicted to my new tartlet cases! Watch this space for more!

I've been craving my mom's home cooking lately.  particularly the way she cooks Bangus (milk fish).  SO I went to the Hong Kong market after work and bought some straight from their seafood department.  they gutted it, scaled it and bagged it for me which took out all the hard work out of it for me.  the down fall to milk fish is that its very boney... so no matter how much you debone it there's always little bits left.  But here is my bento:  Left over Bangus, edimame, rolled egg omulet, grape tomato, and homemade gyoza (with pork curry filling).  the panda bottle contains Patis!

Does anybody remember how she always shared her lunches with people? I always thought of them being so cute... I even tried making those octopus hot dogs once as a kid and failed miserably. lol

Essentially the same ingredients as salad bento 1, just fancier decoration! I think my decorating capabilities really started to improve with practice.

(I apologize for photo quality! I do not have a nice camera, currently, though I am considering getting one soon. For now though I have to take pictures with my phone. Since I am living in a college dorm and make my bentos early in the morning I am limited when it comes to lighting as well, leading to fairly poor quality photos)

Was more ambitious with this one, so it required getting up extra early! In the top layer, shrimp tempura with rice, cucumbers, and mixed carrots and peas. There is sweet chili sauce in the pig. 
Bottom layer: Tomagoyaki, peas, cucumber, mixed fruit, peas, and carrots

This one was really fun!

(I apologize for photo quality! I do not have a nice camera, currently, though I am considering getting one soon. For now though I have to take pictures with my phone. Since I am living in a college dorm and make my bentos early in the morning I am limited when it comes to lighting as well, leading to fairly poor quality photos)

Woohoo, finally I was successful in finding a bento box of two cases in a real store without having it ordered online :)
I found it the last time when I went to Zurich to meet a friend. It was last week. Because I was there too early I had time to pop in the Korean store to see what's new.
I knew they had bento boxes but only a few and very small, transparent ones for children. This time, however, I found a "real" one with two cases and a nice rabbit design. So I bought it ^^. And before you ask: This Korean store also sells Japanese wares.

The first filling of this bento box includes:

- Basmati rice with furikake spicing and one umeboshi
- cut vegetables (zucchini, carrot) and edamame (soy beans)
- 2x vegan wiener octopus
- tamagoyaki with spinach

- fruit pieces (several melons, pineapple) and some grapes
- 1x peanut mochi, 1x small peach mochi

It all tasted good, it was just a shame that I couldn't bring soy sauce with me.

It's been awhile ; u ; 

Lots of nostalgia making this bento.  It's been 2 years since i posted a bento picture here. Ironically I still haven't upgraded my camera since then ahaha. I limited myself to what I had already had at home which happened to be more than I thought I had. 

Top side >
-Green tea and plain dango with a generous amount of smooth anko spread on top.  
    I would like to had made something more colorful like hanami dango but i'm pretty sensitive to artificial coloring. Maybe if i had beets lingering around or something to use as a dye for pink.

-Honeydew flowers 

(I had actually wanted to grill the dango but figured going that route wouldn't be visually sweet enough P: But I'm doing that with the leftovers tonight = u= )

Bottom side left>
-fresh fruit sandwich 
   sweet roll bread
   crunchy red grapes
   greek yoghurt cream cheese 
(This works best with an array of different fruit. So if you want to try this, i'd recommend that instead. ie: kiwi,strawberry,pineapple~~-- and you can use plain white bread with coolwhip instead. Tasty either way though.) 

Bottom side right>
-Homemade candied rhubarb (a gift) with some coconut flakes sprinkles on top w/ two animal head skewers to pick them up by.
(I placed these in a small white paper gift bag to use as a partition/container, my other partitions are too small to fit in that space)

another very simple bento.

i was out of greens, which is why i lined this bento with very thin zucchini slices.
i first made a quick ratatouille: sauté zucchini, eggplant, onion in a little bit of oil, add canned tomatoes and break them up a little. season to taste w/salt, fresh herbs of choice and pepper; put this onto the zucchini slices, covered it with a brown/wild rice mix and added a cucumber panda and some cute panda picks.
the top tier has celery and cucumber bamboo, black sesame and nigella seeds for sprinkling onto the rice and a green tea mochi.

For :iconbento-love:'s contest!
Contest was to create a bento box full of sweets can be homemade or store bought sweets!

Everything was pretty much premade/owned, except for the bread cut outs!

I used a cookie cutter for the star pieces and made the cat with just a sharp knife. Put some butter on those babes and sprinkled with cinnamon and sugar.

In my box I have:

Left Side
Regular Kit Kats
Pudding Kit Kats
Matcha Choco balls
Bake Choco
Hostess cupcake
Cinnamon Sugar Toast cute in star and cat shape

Right Side
Konpeito
Moon Rock fruit snacks
Orange Fruit Candy

And my cup is filled with caprisun! ;>

I made this bento for a friend who love The Simpsons! It was his very first bento :) I really love make bento for friends! I think they are my most beautiful bentos :)

It's been awhile ; u ; 

Lots of nostalgia making this bento.  It's been 2 years since i posted a bento picture here. Ironically I still haven't upgraded my camera since then ahaha. I limited myself to what I had already had at home which happened to be more than I thought I had. 

Top side >
-Green tea and plain dango with a generous amount of smooth anko spread on top.  
    I would like to had made something more colorful like hanami dango but i'm pretty sensitive to artificial coloring. Maybe if i had beets lingering around or something to use as a dye for pink.

-Honeydew flowers 

(I had actually wanted to grill the dango but figured going that route wouldn't be visually sweet enough P: But I'm doing that with the leftovers tonight = u= )

Bottom side left>
-fresh fruit sandwich 
   sweet roll bread
   crunchy red grapes
   greek yoghurt cream cheese 
(This works best with an array of different fruit. So if you want to try this, i'd recommend that instead. ie: kiwi,strawberry,pineapple~~-- and you can use plain white bread with coolwhip instead. Tasty either way though.)

-Homemade candied rhubarb (a gift) with some coconut flakes sprinkles on top w/ two animal head skewers to pick them up by.
(I placed these in a small white paper gift bag to use as a partition/container, my other partitions are too small to fit in that space)

Here is a new simple and motivating bento for my tomorrow's lunch I am a dummy!  I'm sneezing since last week so I'd better take lots of vitamins :omghai:

The left tray is composed of pasta, carots and chicken sliced flavoured with carry and black pepper.

The right tray is made with kiwi slices - obviously - and a mini carrot cake with cottage cheese. Honestly I don't like cupcakes, I adore sponge cakes filled with cream instead of a kind of dry muffin with lots of cream on top of it, although I admit cupcakes are lovely. So I made sponge cake in a cupcake format with cottage cheese above it. I'm pretty sure it will taste good ^^

This bento was made for my trip to the zoo!  The zoo turned out to be really fun for me.  I thought I was going to be bored and dislike the place but after I went in there and saw just how big it was and I got so many good pictures with my brand new camera I found that I really liked the zoo a lot!  I will have to go earlier next time though cuz me and my friend kind of went late and all the animals were in sleep mode.  at least I got some really awesome pictures of chimpanzees and cheetahs!  I'll be posting those in the near future. 

Todays bento consists of rice (hiding underneath the food) a hard boiled egg, edimame (boiled in the pods and slightly salted) Pan-fried seasoned tuna, steamed green beans, and a frozen strawberry (I didn't eat it cuz by the time it thawed it was all mushy) and my favorite fish, SALMON! I brined it over night and then boiled it in salted water before baking it.  turned out really flavorful and juicy!  I was kind of experimenting when I did that but I will try again and if it turns out the same i'll do a sort of recipe thing for that.  same with the tuna.  The tuna it actually something I always do and turns out awesome but I never really write down or keep note on how I make it.  but when I do i'll make a recipe for you guys to try out!  its really awesome and addicting!

A sad story. I broke with my boyfriend… I don't know if I can explain well this bento whose is important to me. The girl, it's me. I blow on the heart to let fly away my love and my lover. Butterflyes symbolize changes. I did not make a face because I'm lost, I was in couple for four years...
