So to the east of Mordor, like you were asking,.. the primary land there is called Khand. Not much is written about it, but it was under the influence of Sauron. The land supplied the armies of Mordor with horses and army men. They sent men to the huge battle at Minas Tirith in the third movie. However, in the Fourth Age, when Aragorn was king, they gradually fell under his rule and stopped being hostile.
No one knows much about its geography, but assumedly it was a dry, barren, desert kind of area.
The other land that was above that was called Rhun, and basically covered all of the eastern part of Middle Earth above Khand. It was the home of the Easterlings, which were also men under Sauron's control. The two wizards who are never mentioned, the Blue Wizards, went east there and were never heard from again. S
