Awesome Shrimp Tacos
1/2 cup small frozen deveined shrimp ( preferably pre-cooked and without the tails attached)
2 small soft corn tortillas
1 Tbsp. Mrs. Dash Fiesta Lime flavor, OR:
1 Tbsp. ground sweet chili pepper or cayenne pepper
2 tbsp. lime juice
Black pepper to taste
Lightly grease a frying pan and cook the shrimp, sprinkling the spices over them. Cook until warm (pink if not cooked already) and evenly coated. Remove tails if necessary after cooking. Heat tortillas either on skillet or in microwave until soft and pliable. Scoop cooked shrimp into tortillas. Top with toppings:
TOPPINGS (to taste)
Guacamole (highly recommended with shrimp)
Sliced cherry tomatoes
Diced purple onions
Shredded cheese (preferably Mexican blend or cheddar)
Fold and eat each taco. Serves 1.
Approx. calories per serving: 290 for two tacos (with salsa, guacamole, veggies only). Add for cheese and sour cream accordingly.
