Because summer doesn't last forever.
Dipper was more upset then he expected to be leaving Gravity falls, true, they would be coming back next year, but that's a whole year, dipper would be 13 by then, and he wanted to see all the mysteries that gravity falls had to offer.

Life had continued on after Dipper and Mabel lost their parents. While they were still sad about it, they were at least reassured that they would be okay.
Their Great Uncle Stan had changed a lot in the matter of two weeks, becoming a better guardian than he was when he thought he was just a summer caretaker.
While Dipper and Wendy knew they were to far apart in age to truly date, they kept a secret relationship that only those of the Mystery Shack knew about.
Pacifica had kept true to her apology and she and Mabel were now friends. She had dropped her whole 'Queen Bee' attitude, and, while it was a bit odd to see her hanging with Mabel, Grenda and Candy, almost sticking out like a sore-thumb, this too, passed by and also seemed normal.

Stan had also gotten Mabel a simple black dress and flat shoes, as she couldn't even wear heels that were 1/4th of an inch of the ground without falling every two seconds. Mabel had wanted to wear a black sweater she had knitted, but Stan believed it to be unnecessary, just like Dipper's hat.
Soos had shown up in a simple 3 piece suit to give the Pine's family a ride to the lake-side, where the funeral was being held. Dipper and Mabel rode in the back while Stan rode shot-gun and Soos drove. Unlike when fishing season opened, Soos was able to make it to the lake-side quicker than Stan had done, and when they made it, they discovered that basically the whole town had turned out for this.

Our story tonight: The famous Stanford Pines, owner of the Mystery Shack, was found unconscious in the woods along with his niece, nephew, and the star of the Tent of Telepathy, Gideon Gleeful. Two of Piness staff members were in the woods and they claim they heard shouting and went to investigate. They then came upon the unconscious group, one badly hurt. The four were rushed to a hospital. Gideon, Stan, and Mabel Pines all woke up hours later, claiming to have no recollection of the incident. Mabels twin brother, Dipper Pines was found with a grappling hook lodged in his shoulder, but doctors were able to remove it safely.
