Well.. So we came home today, very very early in the morning. And of course, after being on holiday we have nothing to eat. Really nothing, except some shrinkwrapped mini cakes. Fortunately wo have enough fruits in our garden to survive the day without starving, and I even managed to find one yoghurt in our fridge! So I made a light cream with some squashed respberries and a teaspoon of home made mixed berry jam, topped with fresh raspberries.
If you want to make it better, bake the mini cakes fresh! And you could also add some icing sugar and cream cheese/mascarpone to the cream. But then you can't call it "light" any more
