You will need:
~4 to 6 small, fresh zucchinis. The little ones are best, and a mix of yellow and green looks nicer than all one or the other.
~1 jar basil pesto
~1 cup chopped walnuts
~1 large onion
~At least 4 cloves of garlic
~1 cup grated parmesan cheese
Cut the ends off the squash, slice them in half the long way, then cut each half into 1/2-inch thick half-medallions. Chop and sautee your onions in the oil, like always. Dice and sautee the garlic once the onions turn translucent and soft. When the garlic is lightly browned toss in the zucchini, and sautee that until it starts to get tender.
