Pimp your Ramen Noodles....Super easy to make this -
All you need are one egg, some greens (i have cilantro and 青刚菜 here), and two small pieces of eel chunks from a can. Your total cost for this bowl of noodle is about $2.50...You get the carbohydrate, protein and vitamin C. Most importantly this should have no more than 500 calories and super delicious.
I make this with left over rice, and either use fresh coriander ot fresh fenugreek, whatever they have at my local shop.
Fry some onions and diced peppers in oil with powdered coriander, cumin, turmeric, fenugreek and ginger, or your preferred masala or curry powder. Add leftover cooked rice, and peas, chick peas and sweetcorn. You can also add grated carrot, raisins and cashews. I love it with grated carrot if I have some but since its an impromptu leftover kinda thing, whatevers in the fridge, you know? Anyway stir it well so the rice picks up the turmeric colour.
