Thought it about time i combine two of my recipes together and this came to mind :) Also i thought it be about time i get back to some chocolate baking after all that fruit! I have never made peanut butter cupcakes before so it was strange to see the sponge so dark.

Strawberry, Raspberry, Blueberry and Apple cupcakes with a crumble topping. Delicious warm and served with hot custard poured on top or piped into the center.

One of my favourite cupcakes i have made so far! I just love the lovely sweet and crumbly topping with the warm fruit inside. Plus it is all gluten free :)

So many raspberrys and strawberrys to use up! Don't worry i only have one summer fruit thing to photograph then i will be going back to the chocolate!

strawberry and raspberry loaf cake drizzled with white chocolate and served with strawberry and raspberry coulis.

The most moist cake i have ever made! Normally a loaf cake takes me about 30 minutes or so to bake but because this had so much fruit in and was so juicy it took about 50 minutes just so it would hold it shape!

I have never made a sauce/coulis before, i didn't use a recipe i just made it up as i went along. In a small pan i bought a little water to the boil, added some chopped strawberrys and raspberrys then added some sugar to taste. Once the fruit had stewed for a time and was nice and soft i blitzed it all up in the food processor. I could have passed it through a sieve to be poncey but i didn't want to waste anything.

A shot of the whole cake. I'm not too happy with this photo so putting it into the artisan crafts section today.

bottom layer chocolate, middle layer peanut butter, top layer vanilla sandwiched together with whipped cream then a healthy amount of chocolate ganache poured on top with some peanut butter piping. Oh and it is all gluten free by the way.

a warm rich chocolate cupcake covered in a rich chocolate custard. Tastes divine warm. Definitely one for the chocolate lovers out there!

I wasn't planning on baking today but i passed some lovely looking blueberries in the shop this morning so decided to make cupcakes (made wit gluten free flour so i could try them) with my eldest daughter.

I was going to put butter cream on top but then realized they are for the kids and it is not exactly good for them plus they would probably end up eating the butter cream and leaving the cupcakes so dusted over a little sugar instead.

I am having a bit of a problem with my camera at the moment. The auto focus is not focusing half the time when i get close to my subject, i have to back off a lot and it is ruining my shots, it is becoming very frustrating. Not being very technical minded i am not sure if it is me or the camera but it has only been happening these past couple of weeks. I will have to have it sent off to be looked at but 3-4 weeks at least with no camera is not a nice thought! On top of that as i baked spur of the moment i didn't have great lighting, i normally photograph at a certain time of day for the best light so apologies for lack of standard today!

Vanilla (gluten free) sponge filed and covered in Nutella and topped with a variety of chocolates for my boyfriends birthday

i didn't have much time to photograph this today, busy, busy week so couldn't wait for better day light (not that it looks like it will get any brighter today!)

Chocolate Profiteroles with whipped cream and a white chocolate ganache sauce. I ran out of whipped cream so i filled the left over ones with some vanilla ice cream.

Please forgive them not looking perfect, this is my first time ever making Profiteroles, practice always makes perfect for me when it comes to trying out new recipes.
I wasn't going to do any more baking this weekend but i had lots of whipped cream left over from making my Terry's Chocolate Orange Cupcakes yesterday


I couldn't find a recipe for such a flavour so adapted this one [link] i am a bit busy today to post my adapted recipe but i should get around to including that in the description soon.

I have lost count how many recipes i have now made using my Chocolate recipe book i got for Valentines day!

My kids love banana so i made this for them, i didn't make it too rich for them so didn't put as much cocoa powder in as the recipe stated. Finally i drizzled over some milk and white chocolate just in case it didn't look appetizing enough to them!

There are two ways you can add the banana, mashed up or like i did chopped up in chunks, in case they did not believe me it was banana in it!

This cake will probably take a while to be eaten up, so a rest from baking for a few days it is :)
