So, these are delicious. The bottom, a brioche french toast round, then there's a crispy round of pancetta, melted camembert cheese all topped with a crispy salted caramelized pear. We served them with elderflower syrup... insert lip smacking noises here!
Usually, in these classes, I don't eat much. It's early in the morning and I just spent a couple hours munching on the raw ingredients so I'm not hungry, but these? These disappeared in a flash.
To make: Preheat an oven to 350 and crisp up your pancetta, it works like bacon. Do the same thing to a bunch of super thinly sliced pears that have been sprinkled with a little bit of salt. Be careful with the pears, I frequently burn them because they go from being totally uncooked to burnt in a few moments. Make your favorite french toast batter, dip brioche rounds into it and fry it in butter... like french toast
Stack the pancetta and french toast rounds together and top it all with a slice or two of camembert or brie, and throw them in the oven for a minute or two, until it's all melted. When they're out, top them with a crispy pear and serve with whatever sweet sticky syrup you like!
