So without further ado, here are some great side-uses for Photoshop masks, at least in my opinion:
1. Non-Destructive Erasing
Never use the eraser tool, I cannot stress that enough!
Say that for example you painted a fox girl character and later on you decide that, for whatever reason, you no longer want the tail - a quick and tempting way of getting rid of it would be to use the eraser tool, right? But if you do that then it will be lost forever and there will be no way to get it back!
